- 2 pounds ground turkey
- ½ cup breadcrumbs
- ½ cup MUMBO BBQ SAUCE (Hickory Smoke)
- 2 cloves garlic, minced
- 2 tbls Cajun seasoning
- ½ cup onion, chopped
- 2 cups shredded smoked cheddar cheese
- 12 French rolls
- 1 small onion, sliced
- 1 tbls butter
- 1 medium tomato, diced
- 1 bottle MUMBO Hickory Smoke BBQ Sauce
Mix the ground turkey, breadcrumbs, MUMBO SAUCE, garlic, Cajun seasoning, onions and cheese. Roll mixture into 1 inch balls. Bake meatballs on baking sheet at 425 degrees for 10-15 minutes until no longer pink.
Sauté sliced onions in butter until soft and slightly brown. Add MUMBO SAUCE to onions and simmer 2 minutes. Add diced tomatoes and simmer another 2 minutes. Pour sauce over meatballs and coat thoroughly. Scoop out the center of the French rolls and neatly stuff meatballs in the opening. Top with cheese if desired.
